In pursuit of my goal of being healthy and fit, I am always looking for quick, delicious and nutritious breakfast ideas.
I love the CLEAN program by Dr. Junger. I read his book and have done the 21-day Clean Program and loved it. But what I like the most about the program, are the amazing recipes posted on their blogs. They are all clean and delicious. This morning, I tried their sweet potato breakfast bowl and it was amazing. I even prepared it for my 2-yr old toddler as it's kid friendly and naturally sweet. I'm making it again tomorrow. I love this - you need to try it out.
Why this is great: sweet potatoes are full of vitamins A and C. Plus, since they're sweet, it feels like a bit of an indulgence. And I love that you can add different toppings to it, adding the fruits and nuts that you have on hand or that you like the most. Plus, preparing the potatoes the night before, makes this super fast to prepare in the morning.
Ingredients:
1 roasted sweet potato
1/4 cu of blueberries
1 Tbsp cacao nibs
1 Tbsp of your favorite chopped nuts (almonds, pecans, walnuts, etc.)
1 Tbsp almond butter
1 Tbsp unsweetened shredded coconut
1/4 tsp ground cinnamon

Ingredients:
1 roasted sweet potato

- Preheat oven to 400 F
- Rinse the sweet potato and prick with a knife 3 times on each side
- Wrap the potato in foil and bake for 45 minutes (you can do this the night before and put the potatoes in the fridge after baking them)
- When the sweet potato has cooled, peel the skin and mash the potato in a small bowl.
- Add the toppings on top of the mashed potatoes.
If you are like me and prefer a warm breakfast, heat the mashed potatoes in the microwave before adding the toppings.
